“Despulpado del café” pays homage to the “Portafolio del Café” by Rafael Tufiño (1954). In this portfolio, Tufiño captured images of coffee processing, from its harvesting to the grinding of the bean. Likewise, “Despulpado del café” presents part of the coffee processing, in which, after harvesting, the fruit or cherry goes through a transformation until it becomes the bean that we know and that reaches our cup. In the foreground, the coffee leaves and cherries stand out in different stages of maturation, while in the background you can see the selection of the red fruits entering the pulper machine, and coming out, at the bottom, as mucilage covered beans, ready to continue to the fermentation, washing and drying stage. It can also be seen how the color palette used in the machine responds to the reddish tones of the cherry, and the subtle nuances of “coffee” color that allude to the different terms in which a good cup of coffee with milk can be enjoyed.
